Saffron comes from Spain, kashmir it is generally considered the best quality saffron to have in store cupboard. Sometimes referred to as styles are harvested from the centre of the crocus flowers, they are used as a natural coloring to give sauces, soups and sweet and savory dishes a golden yellow color and they also impart a delicate, somewhat honey-like flavor. Saffron grows from a bulb up to 30cm in height and is believed to be native to the Eastern area of Greece. The leaves are long thin and blade like and emerald green in color, each bulb can produce up to 4 flowers, each flower has 5-6 petals and are pale lilac in color with magenta veined markings, inside the flowers sits 3 deep red stigmas.
It takes around 150,000 flowers to make 1kg of dried saffron. The spice is the most expensive spice in the world and at certain points in history has been worth more than its weight in gold. Each flower contains just 3 stigmas which must be harvested by hand making harvesting saffron costly and labor intensive. Saffron was grown in the town of Saffron Walden in England from the 14thcentury the plant grew well in the chalky soil in the area, sadly commercial growing of saffron in the town stopped in the early 19th century.

Saffron is a key ingredient in recipes such as Paella, Bouillabaisse and is commonly used in many rice dishes, milk puddings and many sweet and savory dishes to impart color and flavor. Use to flavor soups, custards and sauces. Saffron was also used by the Egyptians as preparations for the face, in the 17th century Nicholas Culpeper described it as being ‘a very elegant and useful aromatic, of a strong penetrating smell, and a warm, pungent, bitters taste. It is said to be more cordial and exhilarating than any of the other aromatics, and is particularly serviceable in disorders of the breast in female obstructions, and hysteric depressions.
